Salmonella Surpise <Another one for Veggies>

Post by Kenneth »

Had this for dinner tonight:

(very) Thinly slice up one sweet white onion per person, and fry in butter till it starts to turn golden brown (stir often once almost done).

While waiting fill a pot with water to cook spaghetti and set to boil. Cook a bit less per person than you normally do and grate up some good hard white cheese (your choice) while waiting.

Once the spaghetti is done (not overcooked, please ;) ) drain it and throw it back into the pot. Quickly toss in the onions, grated cheese and a raw egg or two and mix together.

The idea is that the heat from the spaghetti cooks the eggs... what you are doing is making a crude white sauce right there in the pan.

Don't forget the freshly ground pepper (white if you have it) and salt.

I usually add some tabasco sauce on the plate (my wife adds ketchup!!!)

Again this is a main dish that goes well with something piquant on toast... Marmite perhaps? ;) Seriously though: roasted peppers (peel off the skin after roasting) on buttery toast, and of course it's best if you roast them in a real Italian clay oven over charcoal, but a BBQ will do.

If you are a Meaty and don't want to waste a perfectly good BBQ with only Veggie fare, skinless chickenbreasts and some cheap, but good white wine (I suggest Australian).

Have fun and Enjoy!
