Here is one of our fav. dishes... call it an Italian casserole if you like and use only the best tomatoes.



Melt some butter... a stick or a thick slice of a brick in a small saucepan and put on two pots of water. You'll want to boil 6 eggs and steam 3 or so potatoes, sliced up thickly.

Pour some of the butter in either the bottom of a big electric frying pan (not a skillet) or a warmed up casserole dish (if using the dish warm up the oven to about 350F or 180C).

Once the potato slices are cooked (stick a fork into them to see) place a layer of them into the pan and grate some pepper and salt over them. Now slice up a few tomatoes and layer on top (drizzle the melted butter and more salt and pepper).

Peel and mash up the boiled eggs in the saucepan containing the rest of the melted butter (keeps some butter out, though). Put at least 2 different types of cheese over the tomatoes... grated, crumbled, or thinly sliced, use your favourite cheeses. :)

Cover this with the mashed boiled eggs (if you have any melted butter left drizzle on top) sprinkle with fresh parsley snippings if you got them, but dried will do in a pinch.

Throw it in the oven until the top has started to brown and the tomatoes are cooked or alternatively put the lid on the electric frying pan (hopefully a good oil filled one that has even heat).

Serve with (lightly peppered) mushrooms on toast dizzled with butter or excellent quality olive oil and lemon squeezings.

Goes good with a pils too, esp it you can eat it outdoors. :)
