Pancakes filled with meat (Hortobágyi húsospalacsinta)

Continuing the row of typical Hungarian recipes, here goes the next one.

It might sound funny, pancakes filled with meat, but it is really good :).

Ingredients for 4 persons:

2 Eggs
150 grams of flour
100 ml Milk
100 ml Mineralwater with bubbles
100 ml Cooking oil

500 grams of Pork meat
1 onion
300 ml Sour cream
200 ml Whipped cream
Salt, Pepper, Red Paprika powder

First we make the pancakes. Mix the eggs, then add some milk and/or water, the flour and a pinch of salt. Mix it until you get a usual thickness pancake paste. If too thick, add more water/milk, if too thin, add some flour. Take a pan, put a little oil in and wait a few seconds to get it hot. Then pour about a half ladle paste in it. Take care that it flows everywhere, giving a pan-sized, round shaped pancake. Fry both sides goldbrown.

Make a stew from the pork meat. Cut the onion into little pieces and fry with some oil it on low fire until it gets glassy. Take it off from the fire and add the red paprika powder and the meat (the meat should be cut to cube shaped pieces). Stir it, put it back on the fire and add some water. Cook it until the meat gets soft.

When the stew is ready, mix two spoons of flour to the sour cream and stir it until it is smooth. Pour the sauce off from the meat and mix it with the sour cream mix and add the whipped cream. Put it back on the fire and boil it one more time for a minute.
Mince the meat and mix some of the sauce in it to be able to handle it better. This will be the filling.

Put richly filling on the pancakes, then fold them to small brick shapes and put them in the preheated oven for about 10 minutes.

Take the pancakes out of the oven, and pour the rest of the sauce over them (this can be already done on the plates). Serve hot.

This is a delicios dish which normally gets eaten up much faster than it was made, but it is worth the effort :).

Alternatives:

You can also use chicken instead of the pork. In this case take 4 pieces of chicken breast or leg. Before you mince the meat, remove the bones ;).
Veal can be also used, if you like.

Sounds good. Part of my problem is that in Canada it seems impossible to find real sour cream! Yes they have stuff in the stores that they claim is sour cream, it's even harder to find than real yogurt!

We have something similar to this with meat and vegetables. The vegetables are brown beans (translated directly from Dutch...), mashed tomatoes, corn and paprika. I think you could make this one also without the meat! :)

The same problem in Germany, Kenneth. I normally bring a cooling box full of sour cream and other stuff (like real hungarian cottage cheese), when I come back from Hungary :).
